THE KITCHEN GARDEN: VINAIGRETTE DRESSING RECIPES

In this time of year the garden is a riot of salad that never fails on our table in Borgo di Vigoleno. To make a different flavor and the combination as a side dish or served as an appetizer we use different dressing. Here three vinaigrette to make garden salad  tasty and different from usual:

HONEY & BALSAMIC VINEGARD VINAIGRETTE

1/2 cup balsamic vinegar

1/4 cup honey

1/4 cup olive oil

1 teaspoon soy sauce

Whisk together the olive oil with vinegar, honey, and soy sauce until the honey is completely dissolved and sauce.

 

STRAWBERRY VINAIGRETTE

1/4 cup olive oil

1 cup vinegar

250 gr (10 oz) stawberries

Blend the strawberries anfd then combine oil and vinegar. Mix well and refrigerate for a couple of hours before serving the salad.

 

MUSTARD VINAIGRETTE

1 tablespoon mustard

2 tablespoons balsamic vinegar

3 tablespoons olive oil

1/2 lemon juice

Salt and pepper

In a bowl combine the mustard with balsamic vinegar and lemon juice. Slowly add the olive oil and a pinch of salt and pepper.
